    VINAIGRETTE:

    3 Tbsp (45 mL) cider vinegar

    2 tsp (10 mL) whole grain mustard

    2 tsp (10 mL) honey

    2 Tbsp (30 mL) canola oil

    SALAD:

    1 cup (250 mL) cooked green lentils

    1 cup (250 mL) cooked black beans or small red beans

    1 cup (250 mL) cooked chickpeas

    1 cup (250 mL) finely chopped baby kale

    1/ 2 cup (125 mL) finely chopped radicchio

    1/4 cup (60 mL) dried cranberries

    3 Tbsp (45 mL) chopped fresh cilantro

    3 Tbsp (45 mL) thinly sliced green onions

    to taste, salt and ground black pepper


Directions

  1. In a small bowl, whisk together vinaigrette ingredients. Set aside.
  2. In a large bowl, combine salad ingredients. Toss in vinaigrette and season to taste with salt and pepper.
